Wake up! Better yet go back to sleep in this pillow-to-go. This is the most brilliant invention I've ever seen. I could've used this Ostrich pocket pillow by Kawamura Ganjavian in college, all those painful all-nighters. Oh well diploma in hand, time to go to work.

VEGAN MEAL # 1

Thought I'd post some of the meals I'm enjoying on my vegan diet.
Meal #1 Acorn Squash with Apple Stuffing
Ingredients
1 med. acorn squash
2 sm. apples, peeled, chopped
1/4 cup diced celery
2 tbsp raisons
2 sm. apples, peeled, chopped
1/4 cup diced celery
2 tbsp raisons
1tsp brown sugar
2 tbsp. water
1/2 tsp olive oil
1/2 tsp olive oil
Preheat oven to 400 degrees.
Cut squash in half. Remove seeds. Brush squash with olive oil. Wrap squash in aluminum foil place on baking sheet and cook for 45 minutes.
Combine in a bowl apples, celery, raisons, brown sugar and warm water.
Remove squash from oven and stuff the halves with the apple mixture.
Cook for another 15 minutes or until tender.
Remove and let cool for 15 minutes before serving.
Serves 2.
